Healthy chili-con-carne recipe

The main ingredients in chilli are great sources of fiber and protein.

Lean ground beef is a great source of protein, beans and vegetables provide fiber. Chilli con carne is a healthy option, especially when prepared at home since you choose all the fresh ingredients you want to add and also control the sodium level. Below is a hearty and simple recipe.  Make a giant batch and freeze leftovers for a quick and fresh meal when you don’t have much time to cook. Enjoy the recipe!

 

Ingredients:

-1 lb ground beef

-cooked pinto, kidney and black beans

-1 serrano chile

-1/2 bell pepper

-2 jalapenos

-2 pepperoncinis

-1/2 onion

-6 minced garlic cloves

-1/2 tomato

-tomato sauce

-Tabasco sauce

-pepper, sea salt, basil, oregano, paprika, crushed pepper flakes and onion powder to taste

 

Preparation:

  • Cook and season ground beef until meat is brown.

  • Heat a bit of cooking oil in a large pot. Chop the onion, garlic, serrano chile, bell pepper, jalapenos, pepperoncinis, and tomato, and toss them in once the oil is hot. Sautee them for a few minutes then add the cooked ground beef. Stir everything together and season with pepper, onion powder, basil, oregano, paprika, pepper flakes and salt to taste.
  • Pour between 1/2 cup to 1 cup of tomato sauce. ( if you want your chilli thicker pour less sauce.)
  • Add cooked pinto, kidney and black beans to the pot and warm the chilli for 15-20 minutes. Add Tabasco sauce depending on how spicy you like your chilli.

Grapefruit drink recipe

Grapefruits have a very distinct taste which you either love or absolutely can’t stand to even drink. Personally I prefer a fresh squeezed grapefruit juice over an orange one. If you can get past the taste, which some people find too bitter, you’ll discover grapefruit is actually very healthy for you, and  provides a great source of antioxidants.

Grapefruits are a great source of vitamin C, low in calories, and high in fiber. Antioxidants found in this fruit are a great source to boost your immune system. Grapefruits are acidic, which can cause heartburn in certain people. They can also cause side effects to occur when taking certain medications.

Below I share a cold and refreshing drink with the main ingredient being grapefruit! Hope you enjoy it and if you don’t, feel free to share your anti-grapefruit thoughts in the comments 🙂

You will need:

  • 1-2 grapefruits
  • 1/2 an orange
  • 1 lime
  • Ice
  • A blender and juicer

 

Peel the grapefruit, orange and lime and chop into small pieces. Process the fruit chunks through the juicer. Fill a blender up to about half way to the 1 cup line and crush the ice. Add in the grapefruit, orange, and lime juice and  blend well until you get a frothy drink. Pour in a cup and enjoy this refreshing and healthy summer drink!

 

Baked chicken in foil recipe

This baked chicken recipe is very simple, super delicious and a pretty healthy meal.

Preparation time is quick, then stick it in the oven for 45 mins.* and enjoy a juicy chicken with healthy sides.
Ingredients:
4 pieces of foil cut into squares
4 skinless chicken breasts
Vinaigrette or Italian dressing/ marinade
4 potatoes cut in thin round slices
4 Black olives
1 can of asparagus or green beans

Preparation:
– Set oven at 450 degrees
– Cut off fat and prepare chicken breasts, drain and rinse canned veggies, and wash & slice potatoes.
– Place one chicken breast on a piece of foil and pour 2-3 tbsp. of dressing over it, flip chicken over to ensure both sides are covered with dressing.
– Arrange the sliced potatoes and asparagus or green beans next to the chicken and generously sprinkle the same dressing over them. Or you can try another flavor for a different taste, I’ve used and enjoyed a sesame ginger with mandarin orange juice marinade.
– Cut an olive in half and put it on the chicken, fold the foil into a  well sealed square. Repeat the process for the remaining chicken and place the foil packets on a baking sheet.
– Stick baking sheet with foil packets on top for 45 mins. and enjoy this easy and delicious meal with rice and a crisp Greek salad on the side  🙂
*Cooking time may vary depending on your oven.

The salt draws out water from the meat, which gives you a flavorful and tender piece of steak. I highly recommend checking it out. I tried it out myself and must say it definitely makes a difference!

Heart healthy juice

Try the following recipe for a healthy juice that’s actually pretty tasty!
you will need the following:
-2 stalks of celery
-1 apple
-3 carrots
-1/2 garlic clove
-Pinch of flax seed (optional)
-Juicer
I own and recommend Jack Lalanne’s Power Juicer since it’s stainless steel, easy to clean, and not too noisy.
Preparation:
1.  Wash and cut celery, apple, carrots, and garlic.
2. Make sure pieces aren’t too big and put  through juicer. ( read manual to operate juicer.)
3. Place cup below juicer spout and stir in a pinch of flax seed.
4. Enjoy a crisp and refreshing drink !
